Christmas Fruit Cake

A Christmas special, this cake is the highlight of the festivities! This sponge cake is made with dried fruit, nuts, and spices, while the addition of Nestlé MILKMAID® adds to the creamy texture. Easy to make, this cake should be cooled before serving.

  • Nestlé MILKMAID®
    400 g
  • Sugar
    1/2 cup (75 g)
  • Warm water
    1/3 cup (50 ml)
  • Maida (All Purpose Flour)
    2 cups (200 g)
  • Baking powder
    1 tsp
  • Baking soda
    1 tsp
  • Dalchini (cinnamon) powder
    1/2 tsp
  • Jaiphal (Nutmeg) powder
    1/2 tsp
  • Butter
    100 g
  • Aerated soda
    150 ml
  • Chopped dry fruits
    1½ cups (150 g)
How to Make Christmas Fruit Cake

Prepare Christmas Fruit Cake

  • Step 1

    Preheat oven to 180°C. Grease an 8” round cake tin and dust with maida. Heat sugar in a pan until it melts and becomes brown. Add warm water to make caramel syrup and keep aside.

  • Step 2

    Sieve together maida, baking powder, baking soda, cinnamon, and nutmeg, 2 to 3 times. Sprinkle 1 tbsp maida into the chopped dried fruits to coat them.

  • Step 3

    Mix softened butter and MILKMAID® in a bowl. Fold in the dry sieved ingredients, alternating with aerated soda and caramel syrup, until all are used. Add the chopped dry fruits and fold them into the batter carefully.

  • Step 4

    Pour the batter into the greased cake tin and bake for about 45 minutes at 180° C or until the cake is done. Remove from oven, cool for a while. Loosen the sides of the cake and transfer onto a plate. Cool slightly before cutting into pieces.
